Beans, Greens, and Roasted Garlic Soup

[Mood Tip: Kale is the most nutrient-packed of all the vegetables. A half cup serving supplies your entire day’s need for beta carotene and ample amounts of other mood-boosting nutrients, such as vitamin C, potassium, calcium, and iron. ]

Roast the garlic ahead of time and this soup takes only about half an hour to prepare.

Ingredients:

1 head garlic

1 cup macaroni pasta or any small, tube-shaped pasta

1 tablespoon olive oil

2 large leeks

1 tablespoon fresh rosemary, diced

8 cups kale, washed and chopped

4 cups sweet potato, peeled and chopped into 1/2-inch pieces

7 cups fat-free chicken broth

1 tablespoon “Better Than Bouillon” Chicken Base (optional)

1 teaspoon dried basil

2 cans cannelleni beans, rinsed and drained

salt and pepper

 

Directions:

Heat oven to 425 degrees.

1) Wrap garlic head in tin foil and bake for 40 minutes, or until soft. Remove from oven and cool. Remove cloves from papery shell and set aside.

2) Cook pasta in salted water according to directions on package and cook al dente. Drain and set aside.

3) In a large, nonstick soup pan, heat oil over medium-high heat. Add leeks, rosemary, and roasted garlic cloves and saute, stirring constantly, until leeks are transparent, approximately 5 minutes. Add kale and sweet potato continue to stir for 5 minutes. Add chicken broth and basil, return to gentle boil, reduce heat, and simmer until potato is soft, but firm, approximately 15 minutes.

4) Add beans and pasta to soup, salt and pepper to taste, and heat through for 5 minutes. Serve hot. Makes 10 servings.

Nutritional Analysis per serving: 217 Calories; 13 percent fat (3.2 grams); < 1 gram saturated fat; 23 percent protein; 64 percent carbohydrate; 9.4 grams fiber.

Most people wouldn’t think to turn to a multivitamin for memory. For some however, supplementing with a multivitamin is one of the best things that you can do to boost your brain power. If you are deficient in vital nutrients it may not be dementia you are battling but simple malnutrition.  There are thirteen essential vitamins your body needs to function properly.

In a 2006, a study 70 athlete’s diets were analyzed and all of them were deficient in two or more nutrients (1). The most common deficiencies were iodine, vitamin D, zinc, vitamin E and calcium.

The vitamin deficiencies most commonly associated with memory loss are the B vitamins, and the most common of those is thiamine B-1. There are large concentrations of thiamine in the brain ready to help it produce neurotransmitters which are necessary for thought. Vitamin B6, B9 and B12 help to regulate homocysteine levels in your blood. Low amounts of these B vitamins in your blood can cause homocysteine levels rise which can send you on the fast track to dementia.

Vitamin D is also a common vitamin that most people are deficient in. Researchers are now beginning to grasp the profound impact Vitamin D has on memory. In one 2014 study, they determined that low vitamin D levels is associated with dementia and that with supplementing with Vitamin D, the patients increased episodic memory, mental shifting as well as processing speed. The improvement was slight however it was noticeable (2).

Making sure to eat a diet full of fresh fruits and vegetables, clean meat and getting outside to soak up the rays and also supplementing with a multi vitamin are some of the best ways to avoid vitamin deficiencies.

Creamy Risotto with Wild Mushrooms and Fresh Thyme

Creating a creamy risotto needn’t be intimidating. Commercially-prepared boxed risotto is a welcomed addition to the kitchen for the informed cook looking for a short cut! Feel free to add your favorite vegetable, herb, or seafood.

Ingredients:

1 (5.5-ounce) box risotto (garlic flavored works well)

2 cups mushrooms, chopped (Shiitake, oyster, or button)

1 tablespoon cooking sherry

2 tablespoons fat-free half & half

2 teaspoons fresh thyme or sage, minced

 

Directions:

1) Prepare risotto according to package instructions with the following additions: Add mushrooms to the risotto mixture after you add the water. Continue to cook and stir according to directions. Just before serving, remove cooked risotto mixture from heat and add sherry, half & half, and fresh thyme. Stir well to combine. Serve immediately. Makes 4 servings.

Olive Leaf Extract Battles Sugar Cravings

Most people are aware of the benefits of olives. Those rich, earthy, oval balls that offer a myriad of health benefits ranging from heart health, blood pressure, allergies to cancer, often outshine its lesser known feature. Olive leaf extract helps to combat blood sugar in a few ways. Not only does it slow the uptake of glucose into the blood stream by reducing digestion of sugar speed they protect your insulin sensitivity (3)(4)

In one study of middle aged overweight men, olive leaf extract improved insulin sensitivity by 15% in just 12 weeks (5). Regulating blood sugar is one way to ward off cravings of sweets.   Giving olive leaf extract a try is a great way to do that.

Toasted Tomato and Fresh Basil on Sourdough

Jeanette’s brother “The Chef” has declared this to be the ultimate use and taste for a fresh-picked vine ripened tomato.

Ingredients:

2 tablespoons fat-free or reduced-fat mayonnaise

4 thick slices sourdough bread, toasted

2 medium vine ripened tomatoes, cored and cut into 4 slices each

1/2 cup fresh basil leaves, rinsed, dry, remove stems (1/4 cup per sandwich)

1 teaspoon olive oil mixed with 1 teaspoon balsamic vinegar

salt and pepper to taste

 

Directions:

Spread 1 tablespoon mayonnaise on 2 slices toasted bread. Place 4 slices tomatoes on each slice of bread with mayonnaise. Top with 1/4 cup fresh basil leaves. Drizzle with olive oil/balsamic mixture. Season with salt and pepper. Top with remaining slices of toasted bread, cut in half, and serve. Makes 2 sandwiches.

Omega-3 Fish Oil Offers a Significant Benefit for Adults over 60

It’s no secret that fish oil is good for you. Many studies prove it’s beneficial for lowering cholesterol, reducing inflammation, improving skin health and more. Recent research published in the Journal of Physiological Reports, state that taking a high dose of Omega 3 Fatty Acids, benefits heart health in adults 60-80 years of age.

Researchers from Pennsylvania State College of Medicine, took a close look at arteries in adults. They wanted to see if fish oil could improve cardio vascular health, in healthy adults.  As we age our blood vessel elasticity decreases, which gives way to arterial stiffness. Arterial stiffness can lead to poor heart health and even Cardiovascular Disease.

The scientists conducted the study among two age groups. In group one the adults were between the ages of 21-35 and group two consisted of adults between 60-80. Using scientific means of measurement, the researchers were able to measure artery improvement.   The subjects were instructed to take four Omega -3 capsules daily, in two divided doses, for 3 months.  Each capsule contained 465 mg eicosapentaenoic acid (EPA) and 375 mg docosahexanoic acid (DHA). In just 12 weeks the researchers concluded that the Omega 3- Fatty Acids found in fish oil reversed arterial stiffness in the 60-80-year-old group.

The researchers were somewhat baffled as to why arterial stiffness improved in the older group, but not the younger. They also observed, that the Omega-3 content in the subjects red blood cells increased in both test groups, however the older group seemed to carry more. This was also a mystery to the scientists.

The study did conclusively, surmise that if you are between the ages of 60-80, taking a high dose of fish oil daily, can improve arterial health.

Get to the Root of Angina

Microscopic red blood cells being pumped from your heart to your lungs pick up oxygen and then return through the veins to deliver the oxygen to the cells of the heart. Simply put angina is any episode that reduces oxygen delivery to the heart and causes chest pain.

There are three types of angina and different causes:

  1. Variant angina occurs due to a random spasm of the coronary artery and typically occurs in younger people and when they are at rest. (1) The cause is not related to diet.
  2. Stable angina occurs in response to an increased physical exertion or stress. This type of angina is predictable.
  3. Unstable angina is the most serious, this is when a blood vessel ruptures (often where due to plaque build up) and causes a blood clot that blocks blood flow- this can cause a heart attack.

Medications such as beta-blockers, nitroglycerine, blood thinners and calcium channel blockers can get the blood flowing again and relieve the chest pain. There are also lifestyle and dietary changes you can make to reduce angina episodes and get to the root of the problem.

Stress

Avoid it or deal with it like a stress champ! During stressful moments if you can quickly become aware of the trigger and redirect your thinking, it is possible to stop the stress response. Transcendental meditation done for a period of 20 minutes twice daily showed to reduce angina chest pain in people without plaque build up in arteries. (2)

Fiber

Keep Triglycerides and LDL (bad) cholesterol in check by including enough fiber in your diet. Fruits, vegetables, legumes and whole grains are all nutrient dense sources of fiber. Fiber is naturally cholesterol free, filling and soaks up cholesterol in the gut reducing the amount we absorb.

Get Physical

East Coast Goulash

[Food Tip: The secret to a good goulash is the paprika. If you can find fresh Hungarian paprika, it will add a hot and sweet taste to this dish.]

Wednesday at noon the lunch bell would ring. The most popular lunch was waiting – goulash, green beans, a salad, and a roll. Jeanette’s memory collaborated with her taste buds to recreate this childhood favorite.

Ingredients:

1 pound ground sirloin beef (7 percent fat by weight)

1 1/2 cups celery, diced

1 cup sweet yellow onion, diced

½ cup green bell pepper, diced

2 (14.5-ounce) cans stewed tomatoes, chopped (Italian style stewed tomatoes is especially good)

2 teaspoons dried basil

1 teaspoon dried marjoram

1 teaspoon paprika

1 tablespoon brown sugar

1 tablespoon Worcestershire sauce

½ teaspoon salt

1/4 teaspoon pepper

2 ½ cups Elbo-Roni pasta, uncooked

 

Directions:

1) In a large Dutch oven or sauce pan over medium-high heat, brown beef, celery, onion, and green pepper. Saute for about 8 minutes, breaking up meat into small pieces. Drain any fat.

2) Stir in the remaining ingredients, except pasta. Reduce heat to medium and simmer for 20 minutes. (The longer you simmer, the more tender the meat becomes).

3) Cook the pasta according to package directions. Rinse, drain, and set aside. When sauce is done simmering, add pasta to sauce. Mix well. Serve hot. Makes 6 servings.

Nutritional Analysis per serving: 266 Calories; 19 percent fat (5.6 grams); 2 grams saturated fat; 35 percent protein; 46 percent carbohydrate; 4.5 grams fiber.

If you have decided to breastfeed your amazing little infant then proceed with confidence, as breastfeeding is recommended by a variety of health organizations for all babies up to the age of one. The World Health Organization recommends breastfeeding up to the age of two. There are a few contraindications to breastfeeding, all of which are serious health conditions and should be addressed by your physician. (1)(2)

Breast milk is sourced from nutrients stored within the mothers’ body, for this reason a well balanced nutrient dense diet that has a minor increase of 25 grams of protein per day and an increase of about 340 calories per day for the first 6 months and 400 calories per day for the last 6 months should be sufficient enough to provide adequate nutrition to you and your baby. (3)

A breast fed baby begins life with a nutrient source that is naturally designed to offer an amazing array of nutrient, antibodies, anti-viruses, anti-parasites, anti-allergens and growth factors. (4) For up to the age of 6 months breast milk can provide 100% of the nutritional needs for an infant. At 6 months iron stores are often becoming depleted and it is recommended to begin introducing baby foods, which contain iron.

Vitamin D is another nutrient of concern since many women are deficient. The Dietary Reference Intake is 400IU of vitamin D per day for an infant beginning at birth. Women, who do not have adequate vitamin D stores, may find it necessary to supplement.

Many mothers’ worry if their baby is getting enough milk, just pay attention to your babies feeding cues and provide 8-12 opportunities for your infant to feed in 24 hours. This should provide enough to fill your infants small stomach. (5)

If you have been put on any one of the medications commonly referred to as Statins, don’t worry dooms day has not set in. Statin medications have well the documented beneficial effect of lowering LDL cholesterol. Let’s take a look at the benefits and drawbacks of statins.

Statins are a class of drugs that work by blocking the production of cholesterol by inhibiting the enzyme called HMG-Co A reductase. This same enzyme is also used in the biosynthesis of Coenzyme Q (CoQ10). Our bodies need CoQ10 to produce Adenosine Triphosphate (ATP), the energy currency in our bodies. This is why supplementation with CoQ10 while taking a statin is important.

Statins also carry with them an increased risk for developing type II diabetes. (1) For this reason supplementing with Chromium Picolinate can be beneficial as it has shown to reduce fasting blood glucose levels and lower your HbA1c. (2)

Don’t rely on the statins alone to reduce your risk of a cardiovascular event. Take charge of your health and consider making these four lifestyle changes:

Chicken n’ Mushrooms in Sherry Cream Gravy

Serve over Comfort Food Mashed Potatoes, noodles, or biscuits.

 

Ingredients:

1 pound skinned, boneless chicken breast, cut into bite-sized pieces

salt and pepper

1/4 cup fat-free chicken broth

3/4 cup fat-free half & half

5 tablespoons sherry

3 teaspoons olive oil

1/2 cup baby carrots, thinly sliced

1 pound mushrooms, washed, stemmed, and sliced

1/2 cup onion, chopped

2/3 cup green peas

1 tablespoon fresh thyme leaves

2 teaspoons cornstarch mixed with 2 tablespoons water

2 tablespoons fresh parsley, chopped

 

Directions:

1) Season chicken with salt and pepper. Set aside.

2) In a small bowl, mix broth, half & half, and sherry. Set aside.

3) Heat 1 teaspoon olive oil in a large, nonstick skillet over medium heat. Add carrots and stir for 5 minutes. Add mushrooms and cook, stirring occasionally, until softened and golden brown, about 5 minutes. Transfer to a medium bowl.

4) In the same skillet, add 1 teaspoon olive oil and chicken. Cook until underside of chicken is golden brown, then toss and continue to stir occasionally until almost cooked, about 8 minutes total. Add chicken to bowl of mushrooms and carrots.

5) Add last teaspoon of olive oil and onion to same skillet and cook until onion is translucent, about 3 minutes.

6) Add cream mixture and stir, including any browned bits from pan into sauce. Add peas, thyme, cornstarch mixture and let sauce simmer for 5 minutes. Sauce should be slightly thickened.

7) Reduce heat to medium-low and stir in chicken and mushroom/carrots. Season with salt and pepper. Heat through, but do not boil. Remove from heat and sprinkle with parsley. Serve over mashed potatoes, noodles, or biscuits. Makes 6 servings.

Nutritional Analysis per serving: 190 Calories; 30 percent fat (6.3 grams); 2.7 grams saturated fat; 45 percent protein; 25 percent carbohydrate; 2.4 grams fiber.
